Hi All,

I really want a profiterole mountain for my wedding cake....

Wedding is the 29th December in Carlingford, County Louth - has anyone had one of these made for their wedding or know bakeries in that area that make these??

Croquembouche is what you are looking for. It is a French dessert. I did a quick google and found this cake place in Dublin which makes them

Sounds lovely! Talk to the hotel, they might be able to do it for you and then you wouldn't have to worry about transporting it.

You can buy a spiky stand thing and build them on it, I've made one before and its easier than it looks!

They're quite easy to make (other than the whole spun sugar thing IMO!) but the problems lie in having fresh cream goods displayed in a warm room all day at a wedding, best bet would be to check if the hotel could do one and refrigerate it as long as possible.
