Wedding cake

Anyone planning to make their own cake? Where can I find good recipes? I'm planning a tradition fruit cake to cut plus a chocolate biscuit cake which the caterer will just cut up and serve with the fruit cake.

My Mum used to make the fruit wedding cakes. I will get her recipe of her and post it for you. My H2b is a chef so I will ask him to look into the chocolate biscuit cake as well. Will post it ASAP.

health and safety

just had a letter from my hotel saying that new health and safety rules mean that i cannot bring in a wedding cake unless it is made by a registered cake maker - i think fruit cake is the exception to this though

For gods sake health and safety about a wedding cake thats ridiculous...all you say is that your auntie is a cake maker...so silly the things they come out with

not good enough to say your auntie is a cake maker i'm afraid - you have to produce copies of her registration unless as i say its a fruit cake! mad i know!

You can understand the hotel not wanting people getting sick because of the cake then blaming the hotel and ruining their reputation!! Anyway, is it not supposed to be bad luck for the bride to make the cake (silly superstition I know :wink: )

Choc Biscuit Cake Recipe

Round tin (15cm)

Butter 275g
Golden Syrup 150ml
Good Quality Choc 225g
Digestive Biscuits 1/2 packet
Rich tea biscuits 1/2 packet

(Optional Nuts/fruit)

Method:
- Line the tin with "cling film" allowing enough to completely fold over the top when tin is full
- Melt the choc, syrup and butter in a large bowl in a microwave on medium power. Alternatively place bowl over a pan of hot water. Stir to make sure all ingredients are well mixed
- Add crushed biscuits (fruits/nuts) and stir well
- Transfer mixture to the prepared tin, level it on top and press down well to avoid air gaps. Fold over cling film and cover completely
- Place in the fridge to set, which will take about 3 hours (will keep for up to 2 weeks in fridge)

Cake is very rich, so slice thinly!
This is a small version, for a wedding sized version I guess you would multiply ingredients..

Its because soft icings, ie butter/sugar, fresh cream, chocolate frosting etc can be dangerous if not kept at the right temperatures. Its nothing to do with the hotel really, its your local health board that sets the rules.

and heres a fruit one

Wedding Fruit Cake


1 pound sugar
1 pound butter
1 pound all-purpose flour
10 large eggs
1 pound dates
1 pound raisins
1 pound candied cherries
1 pound candied pineapple
1 pound mixed candied fruit (soak fruit in brandy a week before using)
1/2 teaspoon ginger
2 teaspoons cinnamon
1 teaspoon nutmeg
2 teaspoons ground cloves
1 teaspoon allspice

Preheat oven to 300 degrees. Cream butter and sugar. Add eggs two at a time, beaten. Add flour which has been sifted and to which has been added spices. Flour fruit a little before adding. Mix well. Prepare loaf pans by lining with buttered brown paper. Fill 2/3 full with batter and bake for about 3 hours, covering loosely with aluminum foil after 30 minutes to prevent over-browning (do not let the foil touch the cake). Test with broom straw after about 2 hours. Makes 10 pounds of cake.

Whoever makes the cake has to have some cert from the health board (or something like that). Compo culture I'm afraid.

You can however sign that as hosts of the party you take responsibilities for any actions that result from cake eating.
My sister who is a solicitor laughed when I asked her the question
