croquembouche- has anyone had one?

i am considering having a croquembouche as our wedding cake, has anyone ever seen this before? i wanted something a bit different!! :o0

yeah i've seen it before there is a baker in slane that does them, they are quite pricey though. kind of like profiteroles without the chocolate.

I was at a wedding last summer and they had this style cake looked fab but after the cake had been out on display for at least 4 hours it was revolting the inside of the things were runny hot and disgusting, I'm sure they are beautiful if stored correctly but they had totally gone off by the time we got the cake! So take that into consideration

I'm getting my wedding cake from Julien in French Wedding Cakes. Croquembouche is his speciality as it's the traditional french wedding cake.

My sister had one of these for her wedding and it was fab, now they brought it out for only 20 mins for the cutting of the cake as was fresh cream filling and then had it in the fridge till the evening food was served. Her venue made it for her and they did a brilliant job.
