Icing your own wedding cake

hi I am getting a sister, aunt and future mother in law to make my wedding cake. they are doing different tiers so we are having a fruit, sponge, chocolate and carrot cake. However my question is, as carrot cake is usually iced with a cream cheese, would this look different to the other tiers if they have a fondant icing? any help would be greatly appreciated on this.

Are you displaying all tiers? If not the carrot could be decorated with cream cheese icing and left in the kitchen refrigerated for cutting.

Carrot cake when used as part of wedding cake is normally also covered with fondant to match the other cakes, however I personally would not use a cream cheese icing when doing this as the cake cannot be refrigerated after sugarpasting. Buttercream is best for the job as this will be stable at room temperature for several days.

What way do you intend to display them? Will you be stacking them or using the S type stands hotels usually provide.

Ok thanks for that as I wasn't sure if I was supposed to put the fondant icing on the carrot cake, so thats ok. I was thinking of using the S type stand, so maybe I could keep the carrot cake in the fridge either and just display three tiers. am a bit nervous about doing the icing ourselves but hopefully it should be ok. I'm planning on putting a ribbon around each of the tiers, and putting sugar flowers on top, so not much of the icing will be seen, hopefully!

Be sure to check with the hotel about the cake, some hotels require that the cakemaker be HSE registered. Not all do, but best to check beforehand.
